Steak Frites

Tuesday night Mike said he wanted to cook dinner, so I said great!  He wanted to make steak and french fries {pommes frites} since he has never made fries at home before.  That amazed me because steak and fries were a staple in my home growing up.  Mike followed an America's Test Kitchen recipe, the frites turned out nice and crispy, but not dried out on the inside.  Although this is a French influenced dinner, our steak is Italian.  Well, I should say Certified Piedmontese sirloin.  I found out that the Certified Piedmontese sirloin is genetically leaner than other breeds and boasts of having a better nutritional profile {lower calories, lower fat, lower sodium content, higher protein}.  These cattle are raised responsibly and humanely for example, allowed to graze in open pastures, which reduces stressors and in turn produces tender beef.  You can purchase this beef at Ferguson's Winter Farmers Market

Mike was busy in the kitchen this night; he double fried the potatoes, grilled the steak outside and quickly sauted the broccolini while the steak was resting.  Oh, he also made herb butter to complete the steak.  Does it get any better than this?  Yep, he does dishes too!  I am so blessed!
