Cowboy Cookies

Cowboy Cookies (makes about 3 dozen cookies)

Dry ingredients-

  • 1 1/3 cup quick oats

  • 1 1/3 cup sifted flour

  • 1 cup chocolate chips ( I prefer Ghirardelli semi-sweet or 60% bittersweet chips, but use whatever suits your taste)

  • 1/2 cup white granulated sugar

  • 1/2 cup packed brown sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp salt

*optional: 1/2 chopped pecans. The cookies pictured above do not contain nuts.

Wet ingredients-

  • 1 stick melted butter (Dough is normally very dry, but if unable to form balls add 1 tablespoon extra melted butter. Don't add too much butter, you'll end up with flat cookies.)

  • 1 beaten egg

  • 1 tsp pure vanilla

Preheat oven = 350 F. Place dry ingredients into a large bowl, mix. In a small bowl combine the wet ingredients, mix together with a fork. Pour wet into dry and mix by hand. Again, the dough is dry and you'll be tempted to add liquid, but don't. You should be able to form a ball, tablespoon size. Place on parchment lined baking sheet about 2 inches apart. Bake for 10-13 minutes until lightly browned.

Cool 5 minutes on baking sheet, then transfer to cooling rack. Pour big glass of chilled milk and dunk away!
