1/4 stick of butter, slightly softened
1/8 cup fresh cilantro, finely chopped
1 teaspoon lime zest
1/2 teaspoon fresh lime juice
small pinch of salt & pepper
pinch of paprika and chili powder
Place all ingredients into a small bowl. Using a fork, mix together.
Allow the cilantro lime butter to firm in the refrigerator for 15-30 minutes. Using 2 spoons or melon baller, form round pats. Serve on hot grilled corn.
