Vegetable Tian

Ingredients for Vegetable Tian

  • 4 Tbsp extra virgin olive oil

  • 2 small russet baking potatoes, thinly sliced

  • 3 small tomatoes, thinly sliced

  • 3 medium/large beets, thinly sliced

  • 1 large yellow onion, thinly sliced

  • 2-3 cloves of garlic, minced

  • 4 sprigs of fresh rosemary

  • 4 sprigs of fresh thyme

  • Coarse salt and pepper

Directions for Vegetable Tian

  1. Preheat oven = 400 degrees F.

  2. In a medium skillet over medium heat, add 1 Tbsp of olive oil. Saute onions and garlic until soft and just begin to turn golden.

  3. Coat the bottom of the 9" x 13" baking dish with 1 Tbsp of olive oil. Place the cooked onions and garlic in the bottom of the dish.

  4. Arrange the thinly sliced vegetables on top of the onions, slightly overlapping each slice of vegetable.

  5. Season with 1-2 pinches of salt and pepper. Add the rosemary and thyme. Drizzle with the remaining 2 Tbsp of olive oil. Bake 40 minutes covered with foil. Remove foil, bake an additional 15 minutes. Vegetables should be fork tender and browned.
